Once a month we have a potluck dinner at our church. Last month the theme was mexican so I brought this apple berry salsa. It’s always a big hit.
Salsa Ingredients:
2 med. Granny smith apples
1 c. strawberries
1 kiwi
1 orange
2 T. brown sugar
2 T. apricot jelly
Chip Ingredients:
4 (7 inche) flour tortillas
1 T. sugar
1/2 tsp. cinnamon
Directions:
Preheat oven to 400 degrees.
For cinnamon chips, lightly spray tortillas with water. Combine sugar and cinnamon together and sprinkle lightly over the tortilla shells. If you have an empty spice container that you can use for this it makes it really easy to sprinkle it evenly over the shells but you can use a spoon instead if necessary. Cut each tortilla into 8 wedges. I use a pizza cutter for this. Place in a single layer on a baking sheet and bake for 8-10 minutes, or until lightly browned and crisp. Be careful not to burn them! Remove and let cool.
For salsa, peel cure and dice all of the fruit. Place the diced fruit in a medium sized bowl. Add brown sugar and and apricot jelly. Mix gently. Serve with cinnamon chips. Yum!
