I really, really like cannolis, so when I found this recipe I knew I needed to make it. It was super easy to make and really delicious! The cones do get a little bit soft after a while, but even after sitting in the fridge overnight they were soft, but not soggy, and still delicious. We will definitely be making these again!
Ingredients:
1/2 c. heavy whipping cream
3/4 c. pumpkin
3/4 c. ricotta cheese
1/3 c. sugar
1/4 tsp. cinnamon
1/8 tsp. nutmeg
1/2 tsp. vanilla
8 sugar cones
2 T. chopped chocolate chips
2 T. chopped nuts (optional)
Directions:
In a large mixing bowl, beat the whipping cream until firm peaks form. Scoop into a separate dish and set aside.
Add pumpkin, ricotta cheese, sugar, cinnamon, nutmeg and vanilla to the mixing bowl and beat at medium speed for 1 minute. Carefully fold in the whipped cream.
Spoon, or pipe, filling into sugar cones. Top with chocolate chips and nuts.
