Menu Mondays – Iced Pumpkin Cookies

These cookies are absolutely delicious!  It’s one of the first things we made this fall once we had some pumpkin to cook with again.

Cookie Ingredients:

2.5 c. flour
1 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
dash of cloves
1/2 tsp. salt
1/2 c, butter, softened
1.5 c. sugar
1 c. pumpkin
1 egg
1 tsp. vanilla

Glaze Ingredients:

1 c. powdered sugar
1.5 T. orange juice
1/2 T. butter, melted
1 tsp. vanilla

Directions:

Preheat oven to 350 degrees.

In a medium bowl, cream together the sugar and butter.  Add pumpkin, egg and vanilla.  Beat until creamy.

Combine dry ingredients and add to the pumpkin mixture, stirring until mixed together.

Drop onto cookie sheets by tablespoons; flatten slightly.

Bake for 15-20 minutes.  Let cool.

In a small bowl, combine glaze ingredients.  Drizzle over cooled cookies.
