These creamy potatoes are easy to make and delicious! Perfect for a hot summer day!
Ingredients:
2.5 lbs. small red potatoes, cut into bite sized pieces
2 pkg. (8 oz. each) cream cheese, softened
1 can cream of potato soup
1 T. milk
1 envelope ranch salad dressing (I used 2 heaping T. of homemade ranch dressing mix)
Directions:
Spray crockpot with cooking spray.
Place potatoes in the crockpot.
In a medium sized mixing bowl, combine remaining ingredients and beat together until well mixed. (My cream cheese was still frozen so I just placed everything in the crockpot and then mixed it together once the cheese melted) Pour over potatoes and stir together.
Cook on high for 2.5-3 hours.

These look delicious and easy. I bet this would be good to take to a party….maybe add a few green onions and I suppose you could use whatever soup you had in the cabinet. Thanks for the ideas.
