Menu Mondays – Mini Cherry Cheesecakes

My mother-in-law introduced me to these mini cheesecakes several years ago.  They are SO easy to make and very good!

Ingredients:

2 (8 oz. each) pkg. cream cheese, softened 1/2 c. sugar 2 eggs 1 tsp. vanilla 1 can cherry pie filling vanilla wafers

Directions:

In a small mixing bowl, beat together the cream cheese and sugar until smooth.  Add eggs and vanilla; mix well.

Line cupcake tins with paper liners.  Place 1 cookie in each one and spoon filling into each one until they are all 3/4 full.

Bake at 350 degrees for about 20 minutes, until lightly browned.  Cool on wire rack.  Once cool, top each mini cheesecake with a spoonful of the pie filling.
