Stacy’s Sugarless Oatmeal Raisin Cookies

Sweetened with maple syrup and stevia instead of sugar, these cookies are a delicious healthy alternative to your traditional oatmeal raisin cookies.

This recipe is for a large batch of cookies.  Yield is around 40 cookies so if you don’t want that many be sure to cut the recipe in half.

Stacy’s Sugarless Oatmeal Raisin Cookies:

1 c. maple syrup (dark amber if possible)
1 c. butter, softened
1/8 tsp. stevia
1/2 c. unsweetened apple sauce
1 tsp. vanilla
2 eggs
1 3/4 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
4 c. oats
1 c. raisins

Preheat your oven to 350 degrees.

1. In a large mixing bowl, combine maple syrup and butter; beat until blended.  The butter will still be clumpy; that’s okay.

2. Add stevia and apple sauce; mix in.  Add vanilla and eggs; beat well.
3. Mix in flour, baking soda, cinnamon and salt.
4. Next add the oats and raisins and mix just until blended.

5. Drop by heaping tablespoons onto cookie sheets (do NOT grease the cookie sheets).

6. Put cookie sheets into the oven and bake for ~8 minutes.  Half way through the bake time swap your pans around so that they cook evenly.  (Take the cookie sheet that’s on the top rack and move it to the bottom and take the cookie sheet on the bottom and move it to the top.)  Cookies are done when they start to just turn a light brown in spots.  They should still feel a little bit soft when you press on them.  If you over cook them they will be dry and crumbly so be sure to take them out early enough.
